Ingredients
  

  • 1 lb 450 g boneless, skinless chicken breast or thighs, thinly sliced
  • 2 tablespoons vegetable oil divided
  • 3 cups fresh green beans trimmed
  • Aromatics
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • Sauce
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 –2 teaspoons chili paste or red pepper flakes to taste
  • 2 tablespoons water

Method
 

  1. Prepare all ingredients before cooking.
  2. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
  3. Add chicken in a single layer and cook 3–4 minutes until lightly browned and cooked through. Remove and set aside.
  4. Add remaining oil to the pan, then add green beans. Stir fry 4–5 minutes until bright green and crisp-tender.
  5. Reduce heat slightly; add garlic and ginger. Cook 30 seconds until fragrant.
  6. Return chicken to the pan. Pour in sauce and toss to coat evenly.
  7. Cook 2–3 minutes until sauce thickens slightly and coats everything.
  8. Remove from heat and serve immediately.
