Ingredients
  

  • lb boneless skinless chicken breasts or thighs
  • 1 cup pineapple chunks fresh or canned in juice
  • ¾ cup pineapple juice
  • cup soy sauce low sodium preferred
  • ¼ cup brown sugar
  • ¼ cup ketchup or BBQ sauce
  • 3 cloves garlic minced
  • Optional for thickening
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Optional Garnish
  • Sliced green onions
  • Sesame seeds

Method
 

  1. Add Chicken
  2. Place chicken in the bottom of the slow cooker.
  3. Make the Sauce
  4. In a bowl, whisk pineapple juice, soy sauce, brown sugar, ketchup (or BBQ sauce), and garlic until smooth.
  5. Add Pineapple
  6. Scatter pineapple chunks over the chicken.
  7. Slow Cook
  8. Pour sauce over everything. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken is tender and cooked through.
  9. Thicken Sauce (Optional)
  10. Mix cornstarch with cold water. Stir into slow cooker and cook an additional 20–30 minutes on HIGH.
  11. Serve
  12. Slice or shred chicken and spoon sauce generously over the top. Garnish if desired.
