Ingredients
  

  • 1 lb 450 g boneless, skinless chicken thighs or breasts, sliced
  • 8 oz noodles lo mein, egg noodles, or spaghetti
  • 2 tbsp neutral oil
  • 6 cloves garlic finely minced
  • Sauce
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • ½ cup water or chicken broth
  • 1 tsp cornstarch mixed with 1 tbsp water
  • Black pepper to taste
  • Optional Finish
  • Green onions sliced
  • Sesame seeds or a drizzle of sesame oil

Method
 

  1. Cook noodles according to package directions. Drain and set aside.
  2. Heat oil in a large skillet over medium-high heat. Add chicken; cook until golden and cooked through. Remove and set aside.
  3. Lower heat slightly. Add garlic and sauté until fragrant (about 30 seconds).
  4. Stir in soy sauce, honey/brown sugar, vinegar, water/broth, and pepper. Simmer 1–2 minutes.
  5. Add cornstarch slurry; simmer until the sauce thickens and turns glossy.
  6. Return chicken to the pan, add noodles, and toss until evenly coated.
  7. Finish with green onions and sesame seeds if using. Serve hot.
