Method
- Spread butter evenly on one side of each slice of sourdough bread.
- Flip the bread over and spread pesto on the unbuttered side.
- Sprinkle cheese evenly over the pesto, then top with remaining bread slices (buttered side facing out).
- Heat a skillet over medium-low heat. Place sandwiches in the pan and cook until golden and crisp, 4–5 minutes per side.
- Flip carefully and continue cooking until the cheese is fully melted.
- Remove from heat, rest 1 minute, slice, and serve warm.
