Sourdough Pesto Grilled Cheese

Ingredients
  

  • 4 slices sourdough bread
  • 2 tablespoons unsalted butter softened
  • 3 –4 tablespoons basil pesto homemade or high-quality store-bought
  • cups shredded mozzarella provolone, or fontina cheese (or a blend)
  • Optional: sliced tomato rotisserie chicken, or red pepper flakes

Method
 

  1. Spread butter evenly on one side of each slice of sourdough bread.
  2. Flip the bread over and spread pesto on the unbuttered side.
  3. Sprinkle cheese evenly over the pesto, then top with remaining bread slices (buttered side facing out).
  4. Heat a skillet over medium-low heat. Place sandwiches in the pan and cook until golden and crisp, 4–5 minutes per side.
  5. Flip carefully and continue cooking until the cheese is fully melted.
  6. Remove from heat, rest 1 minute, slice, and serve warm.
