Ingredients
  

  • 4 –6 bone-in skin-on chicken thighs or drumsticks
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • cups chicken broth low sodium recommended
  • 1 cup long-grain white rice uncooked
  • ½ teaspoon poultry seasoning optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Season chicken with salt, pepper, and paprika.
  2. Heat oil in a large skillet or Dutch oven over medium-high heat. Brown chicken on both sides until golden. Remove and set aside.
  3. In the same pan, sauté onion until soft. Add garlic and cook for 30 seconds.
  4. Sprinkle flour over the onions and stir for 1 minute. Slowly whisk in chicken broth, scraping up browned bits.
  5. Stir in rice and poultry seasoning.
  6. Nestle chicken back into the pan. Cover, reduce heat to low, and simmer for 30–35 minutes until rice is tender and chicken is cooked through.
  7. Remove from heat and rest for 5 minutes before serving. Garnish with parsley.
