- In a bowl, toss beef with soy sauce, cornstarch, and oil. Rest 10 minutes.
- Mix all sauce ingredients in a small bowl; set aside.
- Heat a wok or large skillet over high heat. Add oil and sear beef in batches until just browned. Remove and set aside.
- Add onion and bell peppers to the pan; stir-fry 2–3 minutes until crisp-tender.
- Add garlic and ginger; cook 30 seconds until fragrant.
- Return beef to the pan, pour in sauce, and toss quickly until thickened and glossy.
- Serve immediately, sizzling hot.
