Ingredients
  

  • For the Beef
  • 1 lb 450 g flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce low sodium
  • 1 tbsp cornstarch
  • 1 tsp neutral oil
  • For the Stir-Fry
  • 2 tbsp neutral oil vegetable, peanut, or sunflower
  • 1 large onion thickly sliced
  • 2 bell peppers green or mixed colors, sliced
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • For the Sauce
  • 3 tbsp soy sauce low sodium
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • ½ tsp freshly ground black pepper
  • ½ cup water

Method
 

  1. In a bowl, toss beef with soy sauce, cornstarch, and oil. Rest 10 minutes.
  2. Mix all sauce ingredients in a small bowl; set aside.
  3. Heat a wok or large skillet over high heat. Add oil and sear beef in batches until just browned. Remove and set aside.
  4. Add onion and bell peppers to the pan; stir-fry 2–3 minutes until crisp-tender.
  5. Add garlic and ginger; cook 30 seconds until fragrant.
  6. Return beef to the pan, pour in sauce, and toss quickly until thickened and glossy.
  7. Serve immediately, sizzling hot.
