Pretzel Chicken with Mustard Cheddar Sauce

Ingredients
  

  • For the Pretzel Chicken
  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 2 cups pretzels crushed (coarse crumbs)
  • 2 tablespoons olive oil or melted butter
  • For the Mustard Cheddar Sauce
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk warm
  • 1 cup sharp cheddar cheese freshly grated
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. Prepare the Chicken
  2. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  3. Set Up Breading Station
  4. Place flour in one bowl. In another bowl, beat eggs with Dijon mustard. Add crushed pretzels to a third bowl.
  5. Bread the Chicken
  6. Dredge each chicken breast in flour, dip into egg mixture, then coat evenly with pretzels, pressing gently to adhere.
  7. Bake the Chicken
  8. Place chicken on a lined baking sheet. Drizzle with oil or butter. Bake for 25–30 minutes, until golden and cooked through.
  9. Make the Sauce
  10. Melt butter in a saucepan over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in milk until smooth. Add cheddar cheese and Dijon mustard; stir until melted and creamy.
  11. Serve
  12. Serve chicken warm with mustard cheddar sauce drizzled on top or on the side.
