Method
- Toss beef with soy sauce, cornstarch, and oil; rest 10 minutes.
- Mix all sauce ingredients; set aside.
- Heat a wok/skillet over high heat. Add oil; sear beef in batches until just browned. Remove.
- Add onion and bell peppers; stir-fry 2–3 minutes until crisp-tender.
- Add garlic and ginger; cook 30 seconds.
- Return beef, add sauce, and toss until thickened and glossy.
- Serve immediately.
