Ingredients
  

  • For the Beef
  • 1 lb 450 g flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tsp neutral oil
  • For the Stir-Fry
  • 2 tbsp neutral oil vegetable/peanut/sunflower
  • 1 large onion thickly sliced
  • 2 bell peppers green or mixed colors, sliced
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • For the Sauce
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • ½ tsp freshly ground black pepper
  • ½ cup water or beef broth

Method
 

  1. Toss beef with soy sauce, cornstarch, and oil; rest 10 minutes.
  2. Mix all sauce ingredients; set aside.
  3. Heat a wok/skillet over high heat. Add oil; sear beef in batches until just browned. Remove.
  4. Add onion and bell peppers; stir-fry 2–3 minutes until crisp-tender.
  5. Add garlic and ginger; cook 30 seconds.
  6. Return beef, add sauce, and toss until thickened and glossy.
  7. Serve immediately.
