One-Pot Spinach Tomato Pasta

Ingredients
  

  • 8 oz short pasta penne, rotini, or fusilli
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • cups cherry tomatoes halved (or 1 can diced tomatoes)
  • cups vegetable or chicken broth
  • 3 cups fresh baby spinach
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • ½ cup grated Parmesan cheese optional

Method
 

  1. Sauté Garlic
  2. Heat olive oil in a large pot over medium heat. Add garlic and cook until fragrant.
  3. Add Tomatoes
  4. Stir in tomatoes, Italian seasoning, salt, and pepper. Cook briefly until softened.
  5. Add Pasta & Broth
  6. Add uncooked pasta and broth. Bring to a boil, then reduce to a simmer.
  7. Cook Pasta
  8. Simmer, stirring occasionally, until pasta is tender and liquid thickens.
  9. Add Spinach
  10. Stir in spinach and cook until just wilted.
  11. Finish
  12. Adjust seasoning and top with Parmesan if desired.
