Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 2 cups uncooked short pasta rotini, shells, or penne
  • 1 can 10 oz diced tomatoes with green chilies
  • cups chicken or beef broth
  • cups shredded cheddar or Mexican-blend cheese
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper

Method
 

  1. In a large pot over medium heat, cook ground beef until browned. Drain excess grease.
  2. Stir in taco seasoning and cook for 30 seconds to bloom spices.
  3. Add diced tomatoes, broth, and uncooked pasta. Stir to combine.
  4. Bring to a gentle boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is tender.
  5. Reduce heat to low and stir in shredded cheese until melted and creamy.
  6. Taste and adjust seasoning. Serve hot with desired toppings.
