- In a large pot over medium heat, cook ground beef until browned. Drain excess grease.
- Stir in taco seasoning and cook for 30 seconds to bloom spices.
- Add diced tomatoes, broth, and uncooked pasta. Stir to combine.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is tender.
- Reduce heat to low and stir in shredded cheese until melted and creamy.
- Taste and adjust seasoning. Serve hot with desired toppings.
