Season pork chops generously with salt and black pepper.
Heat olive oil in a large skillet over medium heat.
Sear pork chops for 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
Reduce heat to medium-low. Add butter to the skillet and let melt.
Stir in garlic and cook until fragrant, about 30 seconds.
Add honey and soy sauce; simmer gently until slightly thickened.
Return pork chops to the skillet and spoon sauce over them.
Cook 1–2 minutes more until pork reaches 145°F (63°C) internal temperature.
Rest briefly, then serve with extra sauce.
