Ingredients
  

  • For the Soup
  • 1 tbsp olive oil or butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups broccoli florets chopped
  • 3 cups vegetable or chicken broth
  • 1 cup plain Greek yogurt or blended cottage cheese
  • 1 1/2 cups sharp cheddar cheese freshly grated
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/4 tsp paprika or mustard powder optional

Method
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 4–5 minutes.
  3. Stir in garlic and cook until fragrant.
  4. Add broccoli and broth. Bring to a simmer and cook until broccoli is tender.
  5. Blend the soup partially or fully, depending on desired texture.
  6. Reduce heat and stir in Greek yogurt until smooth.
  7. Add cheddar cheese gradually, stirring until melted and creamy.
  8. Season with salt, pepper, and paprika if using. Serve warm.
