Garlic Steak Bites and Potatoes

Ingredients
  

  • lb 680 g sirloin, ribeye, or strip steak, cut into 1-inch cubes
  • 1 lb 450 g baby potatoes or Yukon Golds, halved
  • 2 tablespoons olive oil divided
  • 4 tablespoons unsalted butter divided
  • 5 –6 garlic cloves minced
  • 1 teaspoon paprika
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme or rosemary optional
  • 1 tablespoon fresh parsley chopped (for garnish

Method
 

  1. Season steak cubes with salt, pepper, and paprika; set aside at room temperature.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden and fork-tender, 10–12 minutes. Remove and set aside.
  3. Add remaining olive oil and 1 tablespoon butter to the skillet. Sear steak bites in a single layer until browned, 2–3 minutes per side. Remove and set aside.
  4. Lower heat to medium. Add remaining butter and garlic; cook 30 seconds until fragrant.
  5. Return steak and potatoes to the skillet, add herbs, and toss to coat in garlic butter.
  6. Garnish with parsley and serve immediately.
