Prep the Ingredients
Season chicken with paprika, Italian seasoning, salt, and pepper. Halve potatoes evenly.
Cook the Potatoes
Heat 2 tablespoons oil in a large skillet over medium-high heat. Add potatoes and cook until golden and fork-tender. Remove and set aside.
Sear the Chicken
Add remaining oil to skillet. Cook chicken until golden on both sides and fully cooked. Remove and set aside.
Make the Garlic Sauce
Reduce heat. Add garlic and cook briefly until fragrant.
Combine
Return chicken and potatoes to skillet. Toss to coat in garlic.
Add Parmesan
Sprinkle Parmesan over the skillet and stir gently until melted and creamy.
Serve
Garnish with parsley and serve hot.
