Garlic Parmesan Chicken and Potatoes Skillet

Ingredients
  

  • For the Skillet
  • lb boneless skinless chicken breasts or thighs
  • lb baby potatoes halved
  • 3 tablespoons olive oil or butter divided
  • 5 cloves garlic minced
  • ¾ cup freshly grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. Prep the Ingredients
  2. Season chicken with paprika, Italian seasoning, salt, and pepper. Halve potatoes evenly.
  3. Cook the Potatoes
  4. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add potatoes and cook until golden and fork-tender. Remove and set aside.
  5. Sear the Chicken
  6. Add remaining oil to skillet. Cook chicken until golden on both sides and fully cooked. Remove and set aside.
  7. Make the Garlic Sauce
  8. Reduce heat. Add garlic and cook briefly until fragrant.
  9. Combine
  10. Return chicken and potatoes to skillet. Toss to coat in garlic.
  11. Add Parmesan
  12. Sprinkle Parmesan over the skillet and stir gently until melted and creamy.
  13. Serve
  14. Garnish with parsley and serve hot.
