Ingredients

  • For the Skillet
  • lbs boneless skinless chicken breast or thighs, cut into bite-size pieces
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 lb potato gnocchi shelf-stable or refrigerated
  • ½ cup grated Parmesan cheese
  • Optional: red pepper flakes or fresh parsley

Method

  1. Cook the Chicken
  2. Heat oil or butter in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and cooked through. Remove and set aside.
  3. Sauté the Garlic
  4. Lower heat to medium. Add garlic to the skillet and cook briefly until fragrant, about 30 seconds.
  5. Make the Sauce
  6. Pour in chicken broth, scraping up browned bits. Stir in cream and bring to a gentle simmer.
  7. Cook the Gnocchi
  8. Add gnocchi directly to the skillet. Simmer, stirring occasionally, until tender and the sauce thickens.
  9. Combine & Finish
  10. Return chicken to the skillet. Stir in Parmesan cheese until melted and creamy. Adjust seasoning if needed.
  11. Serve
  12. Garnish with parsley or red pepper flakes if desired and serve hot.
