Ingredients
  

  • 1 lb ground beef or ground turkey/chicken
  • 1 small onion diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney or pinto beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 can 15 oz tomato sauce
  • 1 packet taco seasoning
  • cups chicken or beef broth
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • Optional Toppings
  • Shredded cheese
  • Sour cream or Greek yogurt
  • Tortilla chips
  • Avocado
  • Fresh cilantro

Method
 

  1. Brown ground meat with diced onion in a skillet until fully cooked. Drain excess grease.
  2. Transfer cooked meat to the slow cooker.
  3. Add beans, corn, diced tomatoes, tomato sauce, taco seasoning, and broth.
  4. Stir until well combined.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Taste and adjust seasoning before serving.
  7. Serve hot with desired toppings.
