Ingredients
  

  • For the Chicken & Sauce
  • 1 lb boneless skinless chicken breast (or thighs), diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 6 slices bacon chopped
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 packet 1 oz ranch seasoning mix
  • cups shredded cheddar or Colby Jack cheese
  • For the Gnocchi
  • 16 oz potato gnocchi
  • Optional Garnish
  • Chopped parsley
  • Extra bacon crumbles
  • Grated Parmesan

Method
 

  1. Cook the bacon
  2. In a large skillet over medium heat, cook bacon until crispy. Remove and set aside. Leave about 1 tablespoon of bacon fat in the pan.
  3. Sear the chicken
  4. Season chicken with salt, pepper, and garlic powder. Add olive oil to the skillet and cook chicken until golden and cooked through. Remove and set aside.
  5. Build the sauce
  6. Lower heat to medium-low. Add butter and garlic, sauté for 30 seconds until fragrant. Pour in heavy cream and chicken broth. Stir in ranch seasoning.
  7. Cook the gnocchi
  8. Add gnocchi directly to the sauce. Simmer for 3–4 minutes, stirring gently, until gnocchi is tender and sauce thickens.
  9. Finish the dish
  10. Return chicken and bacon to the pan. Stir in shredded cheese until melted and creamy. Taste and adjust seasoning.
  11. Serve
  12. Garnish with parsley and extra bacon. Serve warm.
