Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 4 cups beef or chicken broth
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • 1 cup heavy cream or half-and-half
  • Optional Toppings
  • Shredded cheddar cheese
  • Chopped green onions
  • Fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess grease if needed.
  2. Add diced onion and garlic; cook until softened and fragrant.
  3. Stir in potatoes, beans, and corn.
  4. Pour in broth and add paprika, chili powder, salt, and black pepper. Stir well.
  5. Bring to a gentle boil, then reduce heat and simmer for 20–25 minutes, or until potatoes are fork-tender.
  6. Lower heat and stir in heavy cream. Simmer gently for 3–5 minutes.
  7. Taste and adjust seasoning. Serve hot with desired toppings.
