Cook the Pasta
Boil pasta in salted water until al dente. Reserve ½ cup pasta water, drain, and set aside.
Cook the Chicken
Season chicken with salt, pepper, paprika, and chili flakes. Heat oil or butter in a large skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and set aside.
Make the Cowboy Butter Sauce
Reduce heat to medium. Add butter to the skillet and let it melt. Stir in garlic and cook until fragrant, about 30 seconds. Add herbs and cream, stirring gently.
Combine
Return chicken to the skillet. Add cooked pasta and reserved pasta water as needed. Toss until everything is evenly coated and creamy.
Serve
Taste and adjust seasoning. Serve hot, garnished with Parmesan if desired.
