- Heat oil in a skillet over medium heat. Toss chicken with taco seasoning and warm through. Set aside.
- In a small bowl, whisk all sauce ingredients until smooth.
- Lay a tortilla flat. Spread a thin layer of sauce over half.
- Sprinkle cheese, add chicken, then top with more cheese.
- Fold tortilla in half and cook in a clean skillet over medium heat until golden and crispy on both sides and cheese is melted.
- Rest for 1 minute, slice, and serve warm.
