Ingredients
  

  • Chicken
  • 2 cups cooked chicken breast sliced or shredded
  • 1 teaspoon taco seasoning
  • 1 tablespoon oil
  • Creamy Quesadilla Sauce
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon pickled jalapeño juice
  • 1 teaspoon taco seasoning
  • ½ teaspoon smoked paprika
  • Assembly
  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar or Monterey Jack cheese

Method
 

  1. Heat oil in a skillet over medium heat. Toss chicken with taco seasoning and warm through. Set aside.
  2. In a small bowl, whisk all sauce ingredients until smooth.
  3. Lay a tortilla flat. Spread a thin layer of sauce over half.
  4. Sprinkle cheese, add chicken, then top with more cheese.
  5. Fold tortilla in half and cook in a clean skillet over medium heat until golden and crispy on both sides and cheese is melted.
  6. Rest for 1 minute, slice, and serve warm.
