Ingredients
  

  • Chicken
  • 1 lb boneless skinless chicken breast, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper to taste
  • Creamy Quesadilla Sauce
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • 1 –2 tsp pickled jalapeño juice optional, for tang
  • Assembly
  • 4 large flour tortillas
  • 2 cups shredded cheese mozzarella + cheddar or Monterey Jack
  • Butter or oil for the skillet

Method
 

  1. Cook the chicken
  2. Heat olive oil in a skillet over medium heat. Season chicken with spices, salt, and pepper. Cook until golden and cooked through. Set aside and slice thinly.
  3. Make the sauce
  4. In a bowl, whisk all sauce ingredients until smooth. Adjust spice to taste.
  5. Assemble
  6. Lay a tortilla flat. Spread sauce on one half, add chicken, and sprinkle generously with cheese. Fold tortilla over.
  7. Grill
  8. Heat a lightly buttered skillet over medium. Cook quesadilla until golden and crispy, flip, and cook until cheese melts.
  9. Serve
  10. Rest briefly, slice, and serve warm.
