Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

  • For the Chicken
  • 1 lb boneless skinless chicken breast or thighs
  • teaspoons chipotle seasoning or chipotle powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt & black pepper to taste
  • 1 tablespoon olive oil
  • For the Chipotle Ranch Sauce
  • ½ cup ranch dressing
  • 1 –2 teaspoons chipotle adobo sauce or chipotle powder to taste
  • 1 tablespoon lime juice
  • For Assembly
  • 4 large flour tortillas
  • 2 cups cooked rice white, brown, or cilantro-lime
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ½ cup corn optional
  • ¾ cup shredded cheese cheddar, Monterey Jack, or blend

Method
 

  1. Season the Chicken
  2. Pat the chicken dry. Toss with olive oil, chipotle seasoning, paprika, garlic powder, salt, and pepper.
  3. Cook the Chicken
  4. Grill or pan-sear over medium-high heat for 5–7 minutes per side until fully cooked and lightly charred. Rest for 5 minutes, then slice.
  5. Make the Sauce
  6. In a small bowl, whisk together ranch dressing, chipotle sauce, and lime juice. Adjust heat to taste.
  7. Assemble the Burritos
  8. Warm tortillas. Add rice, sliced chicken, lettuce, tomatoes, corn, cheese, and drizzle with chipotle ranch sauce.
  9. Wrap & Crisp (Optional)
  10. Fold tightly and toast burritos in a skillet until golden and slightly crispy on both sides.
