Ingredients
  

  • For the Chicken
  • - 1 lb 450 g boneless, skinless chicken thighs or breasts, diced
  • - 2 tablespoons olive oil
  • - 1 teaspoon chili powder
  • - 1 teaspoon ground cumin
  • - ½ teaspoon smoked paprika
  • - ½ teaspoon garlic powder
  • - ½ teaspoon salt
  • - ¼ teaspoon black pepper
  • For Serving
  • - 12 small corn tortillas
  • - ½ cup white onion finely chopped
  • - ½ cup fresh cilantro chopped
  • - 2 limes cut into wedges
  • Optional Toppings
  • - Salsa
  • - Avocado slices
  • - Mexican crema
  • - Crumbled queso fresco

Method
 

  1. In a bowl, toss chicken with olive oil and all spices until evenly coated.
  2. Heat a cast-iron skillet over medium-high heat.
  3. Add chicken in a single layer and cook undisturbed for 3–4 minutes until crispy.
  4. Stir and continue cooking until chicken is fully cooked and golden.
  5. Squeeze fresh lime juice over chicken and toss briefly.
  6. Warm tortillas in a dry skillet or directly over flame.
  7. Assemble tacos with chicken, onion, cilantro, and desired toppings.
  8. Serve immediately with lime wedges.
