Brown the Sausage
Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until lightly browned. Remove and set aside.
Sauté Aromatics
In the same skillet, add onion and cook until softened. Stir in garlic and cook for 30 seconds until fragrant.
Toast the Orzo
Add orzo to the skillet and stir to coat in the oil and aromatics. Toast for 1–2 minutes.
Simmer
Pour in chicken broth, season with salt and pepper, and bring to a gentle simmer. Cook, stirring occasionally, until orzo is tender and most liquid is absorbed.
Add Broccoli
Stir in broccoli florets and cook until bright green and tender-crisp, about 3–4 minutes.
Finish the Dish
Return sausage to the skillet. Stir to combine and finish with Parmesan cheese if using.
Serve
Taste and adjust seasoning. Serve warm.
