Ingredients
  

  • 12 oz fully cooked chicken sausage sliced
  • cups orzo pasta
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 small onion or shallot finely diced
  • 3 cloves garlic minced
  • 3 cups chicken broth low sodium preferred
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese optional
  • Optional Add-Ins
  • Red pepper flakes
  • Lemon zest or lemon juice
  • Fresh parsley or basil

Method
 

  1. Brown the Sausage
  2. Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until lightly browned. Remove and set aside.
  3. Sauté Aromatics
  4. In the same skillet, add onion and cook until softened. Stir in garlic and cook for 30 seconds until fragrant.
  5. Toast the Orzo
  6. Add orzo to the skillet and stir to coat in the oil and aromatics. Toast for 1–2 minutes.
  7. Simmer
  8. Pour in chicken broth, season with salt and pepper, and bring to a gentle simmer. Cook, stirring occasionally, until orzo is tender and most liquid is absorbed.
  9. Add Broccoli
  10. Stir in broccoli florets and cook until bright green and tender-crisp, about 3–4 minutes.
  11. Finish the Dish
  12. Return sausage to the skillet. Stir to combine and finish with Parmesan cheese if using.
  13. Serve
  14. Taste and adjust seasoning. Serve warm.
