Ingredients
  

  • Chow Mein
  • 10 oz chow mein noodles or egg noodles
  • 1 lb boneless skinless chicken breast or thighs, thinly sliced
  • 2 tbsp vegetable or peanut oil
  • 2 cups shredded green cabbage
  • 1 cup julienned carrots
  • 3 green onions sliced
  • Sauce
  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tbsp sugar
  • ½ cup chicken broth
  • 1 tsp sesame oil

Method
 

  1. Cook noodles
  2. Cook noodles according to package instructions. Drain and set aside.
  3. Prepare sauce
  4. In a bowl, whisk soy sauce, oyster sauce, cornstarch, sugar, chicken broth, and sesame oil. Set aside.
  5. Cook chicken
  6. Heat oil in a wok or large skillet over medium-high heat. Add chicken and stir-fry until cooked through. Remove and set aside.
  7. Cook vegetables
  8. Add a bit more oil if needed. Stir-fry cabbage and carrots until crisp-tender.
  9. Combine
  10. Return chicken to the pan. Add cooked noodles and pour sauce over everything.
  11. Toss & serve
  12. Toss quickly until noodles are coated and sauce thickens. Finish with green onions and serve hot.
