Ingredients
  

  • 1 lb ground chicken not extra-lean
  • 1 tbsp olive oil
  • 1 small onion finely diced
  • 1 bell pepper finely diced
  • 3 cloves garlic minced
  • 2 –3 tsp Cajun seasoning to taste
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • ¾ cup tomato sauce
  • ¼ cup ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp brown sugar or honey optional
  • 4 hamburger or brioche buns lightly toasted
  • Optional Toppings
  • Pepper jack or provolone cheese
  • Pickles or pickled onions
  • Coleslaw

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper; sauté until soft.
  3. Stir in garlic and cook 30 seconds until fragrant.
  4. Add ground chicken and cook, breaking it up, until no longer pink.
  5. Season with Cajun seasoning, smoked paprika, salt, and pepper.
  6. Stir in tomato sauce, ketchup, Worcestershire sauce, and sugar (if using).
  7. Reduce heat and simmer 5–8 minutes until thick and saucy.
  8. Taste and adjust seasoning.
  9. Spoon mixture onto toasted buns and serve hot.
