- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper; sauté until soft.
- Stir in garlic and cook 30 seconds until fragrant.
- Add ground chicken and cook, breaking it up, until no longer pink.
- Season with Cajun seasoning, smoked paprika, salt, and pepper.
- Stir in tomato sauce, ketchup, Worcestershire sauce, and sugar (if using).
- Reduce heat and simmer 5–8 minutes until thick and saucy.
- Taste and adjust seasoning.
- Spoon mixture onto toasted buns and serve hot.
