Ingredients
  

  • Chicken
  • lb boneless skinless chicken breast or thighs, cut into bite-size pieces
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp vegetable oil
  • Sauce
  • ½ cup brown sugar light or dark
  • cup soy sauce low-sodium recommended
  • 2 cloves garlic minced
  • 1 tbsp butter
  • ¼ cup pineapple juice from canned pineapple or fresh
  • Pineapple
  • cups pineapple chunks fresh or canned, drained
  • Optional Garnish
  • Green onions sliced
  • Sesame seeds

Method
 

  1. Sear the chicken
  2. Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden and mostly cooked through. Remove and set aside.
  3. Make the sauce
  4. Reduce heat to medium. Add butter and garlic to the skillet and sauté until fragrant, about 30 seconds. Stir in brown sugar, soy sauce, and pineapple juice.
  5. Add pineapple
  6. Add pineapple chunks and simmer for 2–3 minutes until the sauce begins to thicken.
  7. Finish cooking
  8. Return chicken to the skillet. Toss to coat evenly and simmer for 5–7 minutes until the sauce is thick, glossy, and the chicken is fully cooked.
  9. Serve
  10. Garnish with green onions or sesame seeds and serve warm.
