Season chicken breasts with salt and pepper.
In a bowl, mix breadcrumbs, Parmesan, and Italian seasoning.
Dip chicken into beaten eggs, then coat evenly with breadcrumb mixture.
Place chicken on baking sheet and lightly spray with oil.
Bake for 18–22 minutes, flipping once, until golden and cooked through.
Spoon marinara sauce over each piece and top with mozzarella cheese.
Return to oven and bake 5–8 minutes until cheese is melted and bubbly.
Rest briefly before serving.
