Preheat oven
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the beef
Brown ground beef in a skillet over medium heat. Season lightly with salt and pepper. Drain excess fat.
Assemble enchiladas
Spoon beef evenly into tortillas, roll tightly, and place seam-side down in the baking dish.
Add sauce & cheese
Pour enchilada sauce evenly over the tortillas. Sprinkle cheese on top.
Bake
Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
Rest & serve
Let rest for 5 minutes before serving.
