Ingredients
  

  • 1 lb ground beef
  • 1 10 oz can red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar or Mexican-blend cheese
  • Salt & black pepper to taste

Method
 

  1. Preheat oven
  2. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  3. Cook the beef
  4. Brown ground beef in a skillet over medium heat. Season lightly with salt and pepper. Drain excess fat.
  5. Assemble enchiladas
  6. Spoon beef evenly into tortillas, roll tightly, and place seam-side down in the baking dish.
  7. Add sauce & cheese
  8. Pour enchilada sauce evenly over the tortillas. Sprinkle cheese on top.
  9. Bake
  10. Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
  11. Rest & serve
  12. Let rest for 5 minutes before serving.
